Cinnamon Bars

Ingredients:

  • 2 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 cups brown sugar, tightly packed
  • 1/2 cup butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 bag cinnamon chips
  • 1 bag white chocolate chips

Topping:

  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 tablespoon butter, melted

Directions:

  1. Preheat oven to 350ºF.
  2. In a medium bowl, mix together the flour, cinnamon, baking powder and baking soda.
  3. Add brown sugar and butter to a saucepan.  Cook over medium heat until melted and smooth (about 5 minutes).  Remove from heat and cool for 10 minutes.
  4. Add the eggs and vanilla to the brown sugar mixture.  Stir to combine.
  5. Stir in the four mixture. Add the cinnamon and white chocolate chips and stir.
  6. Spread the batter in a 9×9 baking pan.
  7. Put in oven and bake for 40 minutes.
  8. While bars are cooking, mix together the sugar and cinnamon in a small bowl for the topping.
  9. Take bars out of the oven and allow to cool for 5 minutes.  Brush the top of the bars with melted butter and sprinkle with topping.
