Ingredients:
Bread
- 1 cup applesauce
- ½ cup sugar
- ½ cup tightly packed light brown sugar
- 2 eggs
- ¼ cup vegetable oil
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 1 cup peeled, cored, and diced apple (1 apple)
Glaze
- ½ cup butter
- ½ cup brown sugar
- 1 tablespoon milk
Directions:
Bread
- Spray a 9×5 inch loaf pan with non stick spray and preheat oven to 350º
- Combine applesauce, sugar, brown sugar, eggs, oil, and vanilla.
- Add in flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir to combine.
- Fold in apples
- Pour batter into loaf pan
- Bake for 60 minutes (until a toothpick inserted into the center of the bread comes out clean)
Glaze
- Melt butter in a small saucepan on medium heat
- Add in brown sugar and milk. Whisk constantly.
- Bring to a boil and let boil for 2 minutes while continuing to whisk.
- Remove from heat and let it cool for 30 minutes to 1 hour (until it has thickened). Stir every 10 minutes.
- Pour glaze over bread and let sit for 2-3 hours.
