Caramel Apple Bread

Ingredients:

Bread

  • 1 cup applesauce
  • ½ cup sugar
  • ½ cup tightly packed light brown sugar
  • 2 eggs
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 cup peeled, cored, and diced apple (1 apple)

Glaze

  • ½ cup butter
  • ½ cup brown sugar
  • 1 tablespoon milk

Directions:

Bread

  1. Spray a 9×5 inch loaf pan with non stick spray and preheat oven to 350º
  2. Combine applesauce, sugar, brown sugar, eggs, oil, and vanilla.  
  3. Add in flour, baking powder, baking soda, salt, cinnamon, and nutmeg.  Stir to combine.
  4. Fold in apples
  5. Pour batter into loaf pan
  6. Bake for 60 minutes (until a toothpick inserted into the center of the bread comes out clean)

Glaze

  1. Melt butter in a small saucepan on medium heat
  2. Add in brown sugar and milk.  Whisk constantly.
  3. Bring to a boil and let boil for 2 minutes while continuing to whisk.
  4. Remove from heat and let it cool for 30 minutes to 1 hour (until it has thickened).  Stir every 10 minutes.
  5. Pour glaze over bread and let sit for 2-3 hours.
