Cinnamon Sugar Donut Holes

Ingredients:

Donut Holes

  • 1 ½ cups flour (substitute regular flour with gluten free flour to make these muffins gluten free)
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • ¼ cup and 1 teaspoon sugar
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon nutmeg
  • ¼ cup melted coconut oil
  • ½ cup almond milk (or other non-dairy milk)
  • ¼ cup and 1 tablespoon applesauce
  • 1 teaspoon vanilla

Cinnamon sugar coating

  • 3 tablespoons melted coconut oil
  • ¼ cup sugar
  • 1 teaspoon cinnamon

Directions:

  1. Preheat oven to 375º
  2. Grease mini muffin tin
  3. In a large bowl, whisk the flour, baking powder, salt, sugar, nutmeg, and cinnamon
  4. In a small bowl, mix the melted coconut oil, non-dairy milk, applesauce, and vanilla together
  5. Pour wet ingredients into dry ingredients and mix well to combine
  6. Fill muffin tin ¾ of the way full
  7. Bake for 8-10 minutes
  8. While muffins are baking, place melted coconut oil in a bowl and combine the sugar and cinnamon in another
  9. Remove muffins from oven and let cool for 10 minutes in tin
  10. Remove muffins from tin and place on a cooling rack
  11. Dip one muffin at a time into the oil first and then into the cinnamon/sugar mixture and place it back on the rack
