Lemon Bars

Ingredients:

  • 1 cup butter
  • ⅔ cup powdered sugar
  • 2 ¼ cup flour
  • 2 cups sugar
  • 4 eggs
  • 7 tablespoons fresh lemon juice
  • ¼ cup grated lemon peel (about 6 lemons)
  • 1 teaspoon baking powder

Directions:

  1. Preheat oven to 350º
  2. Using an electric mixer, beat butter in a large bowl until fluffy
  3. Beat in powdered sugar.  Add 2 cups flour, 1 cup at a time.  Beat until moist clumps form
  4. Using the back of a fork, press dough over the bottom of a nonstick 13×9 inch baking pan
  5. Bake crust until light golden, about 20 minutes
  6. Meanwhile… beat sugar and eggs in medium bowl until blended
  7. Beat in fresh lemon juice, lemon peel, and baking powder, then remaining ¼ cup flour for filling
  8. Pour lemon filling over hot crust
  9. Bake until filling is set in center and begins to brown on top, about 20 minutes
