Ingredients:
- 2 ½ cups flour
- ¾ teaspoons baking soda
- 1 teaspoon baking powder
- 1 cup (2 sticks) butter softened
- 1 ¼ cup sugar
- 3 egg yolks
- 1 teaspoon vanilla extract
- Zest of 2 lemons
- 1 ½ tablespoons fresh lemon juice
- ¼ cup sugar (for rolling)
Directions:
- Preheat oven to 350º
- Line two large baking sheets with parchment paper
- Whisk together flour, baking soda, and baking powder in medium sized bowl
- In large bowl, using an electric mixer, cream together the butter and sugar
- Add yolks, vanilla, lemon zest and lemon juice to butter and sugar mixture. Mix until combined.
- Add flour mixture and mix until just combined (Don’t overmix)
- Scoop dough into balls (about 2 tablespoons each), roll in sugar and place onto prepared baking sheet.
- Bake for 15-18 minutes or until tops of cookies start to crack
