Lemon Sugar Cookies

Ingredients:

  • 2 ½ cups flour
  • ¾ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 cup (2 sticks) butter softened
  • 1 ¼ cup sugar
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 1 ½ tablespoons fresh lemon juice
  • ¼ cup sugar (for rolling)

Directions:

  1. Preheat oven to 350º
  2. Line two large baking sheets with parchment paper
  3. Whisk together flour, baking soda, and baking powder in medium sized bowl
  4. In large bowl, using an electric mixer, cream together the butter and sugar
  5. Add yolks, vanilla, lemon zest and lemon juice to butter and sugar mixture.  Mix until combined.
  6. Add flour mixture and mix until just combined (Don’t overmix)
  7. Scoop dough into balls (about 2 tablespoons each), roll in sugar and place onto prepared baking sheet.
  8. Bake for 15-18 minutes or until tops of cookies start to crack
