White Chocolate Caramel Pretzel Cookies

Ingredients:

  • ¾ cup butter (room temperature)
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon vanilla
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups flour
  • 1 cup pretzel crisps crushed
  • ½ cup white chocolate chips
  • ½ cup caramel chips

Directions:

  1. Using an electric mixer fitted with the paddle attachment, beat together the butter, brown sugar and sugar until creamy.  
  2. Beat in the egg and egg yolk.  Then add the vanilla and mix until combined.
  3. Add in the cornstarch, baking soda, salt and flour, mixing until the dough is soft.
  4. Add in the pretzel crisps, white chocolate chips and caramel chips.  Mix until combined.
  5. Cover and refrigerate the dough for 1 hour (at least).
  6. While the dough is in the refrigerator, preheat the oven to 350º.  Line two baking sheets with parchment paper.
  7. Take the dough out of the refrigerator and scoop dough onto the trays.
  8. Bake for 8-10 minutes.
