Double Chocolate Zucchini Bread

Ingredients:

  • 1 ½ cups shredded zucchini
  • 1 cup flour
  • ½ cup cocoa powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon espresso powder
  • ¾ cup semi-sweet chocolate chunks
  • 2 eggs
  • ¼ cup canola oil
  • ¼ cup buttermilk
  • ½ cup sugar
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 350º and grease 9×5 bread loaf pan
  2. Place shredded zucchini in food processor to blend.  Blend until zucchini is diced.
  3. In a large bowl, whisk flour, cocoa powder, baking soda, baking powder, salt, espresso powder, and chocolate chunks together.
  4. In a medium bowl, whisk the eggs, oil, yogurt, sugar, and vanilla together.
  5. Pour the wet ingredients into the dry ingredients and mix until combined.
  6. Fold in the chopped zucchini with a spatula.
  7. Pour batter into prepared baking pan.
  8. Bake for 55 minutes (until a toothpick inserted in the center comes out clean)
