Ingredients:
- 1 ½ cups shredded zucchini
- 1 cup flour
- ½ cup cocoa powder
- ¾ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ¼ teaspoon espresso powder
- ¾ cup semi-sweet chocolate chunks
- 2 eggs
- ¼ cup canola oil
- ¼ cup buttermilk
- ½ cup sugar
- 1 teaspoon vanilla
Directions:
- Preheat oven to 350º and grease 9×5 bread loaf pan
- Place shredded zucchini in food processor to blend. Blend until zucchini is diced.
- In a large bowl, whisk flour, cocoa powder, baking soda, baking powder, salt, espresso powder, and chocolate chunks together.
- In a medium bowl, whisk the eggs, oil, yogurt, sugar, and vanilla together.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Fold in the chopped zucchini with a spatula.
- Pour batter into prepared baking pan.
- Bake for 55 minutes (until a toothpick inserted in the center comes out clean)
