Oreo-layered Brownies

Ingredients:

  • 1 cup coconut oil
  • 2 tablespoons cooking oil
  • 2 ¼ cups sugar
  • 4 eggs
  • 4 teaspoons vanilla
  • 1 cup flour
  • 1 cup cocoa powder
  • ½  teaspoon salt
  • Oreos (one package)

Directions:

  1. Preheat oven to 175º and lightly grease 9×13-inch baking pan.
  2. Combine melted coconut oil, oil, and sugar.
  3. Add eggs and vanilla and mix.
  4. Add flour, cocoa powder and salt.  Stir until just combined.
  5. Pour half of batter into prepared pan.
  6. Place oreos on top until the whole pan is covered.
  7. Pour remaining half of batter over oreo layer (don’t worry if batter doesn’t completely cover oreos, it will spread when cooked)
  8. Bake for 20-25 minutes
  9. Remove and allow to cool before slicing (you might have to refrigerate brownies if they are too gooey to cut; this is normal)
