Sugar Cookie Bars

Ingredients:

Cookie

  • 2 sticks butter softened
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 5 cups flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda

Frosting

  • 1 ½  sticks butter softened
  • 6 oz cream cheese, softened
  • ¾  teaspoon vanilla
  • ¾  teaspoon almond extract
  • 6 cups powdered sugar
  • 3 tablespoons heavy cream
  • Food coloring (desired color)

Directions:

Cookie

  1. Heat oven to 350º and prepare a cookie sheet by spraying with non-stick spray
  2. In an electric mixer, cream butter and sugar until light and fluffy (about 2-3 minutes)
  3. Add eggs (mixing after each added egg)
  4. Mix in vanilla
  5. In a separate bowl whisk together flour, salt, and baking soda
  6. Add dry mixture to the wet mixture and mix until just combined
  7. Spread cookie dough onto the greased baking sheet
  8. Bake for 12-15 minutes until edges are light golden brown
  9. Remove from the oven and let cool completely

Frosting

  1. In an electric mixer, mix butter and cream cheese until smooth and creamy
  2. Add vanilla and almond extracts and blend
  3. Add powdered sugar 1-2 cups at a time until combined
  4. Add milk a little at a time and mix until smooth
  5. Spread over cooled cookie bar
