Stuffed Peanut Butter Cookies

Ingredients:

  • 1 cup peanut butter
  • 1 stick butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • Mini rolos or mini reeses cups (or whatever you are stuffing the cookies with)

Directions:

  1. Preheat oven to 350ºF and prepare baking sheets
  2. Cream together peanut butter, butter, sugar and brown sugar with an electric mixer until smooth and creamy.
  3. Add the egg and vanilla and mix until combined
  4. Whisk together the flour, baking soda, and salt in a separate bowl
  5. Stir the flour mixture into the butter mixture until fully combined
  6. Make dough into small balls (about 1 inch in diameter)
  7. Press a rolo or reeses cup into the center of each ball and roll the dough in your hand until the rolo or reeses is in the center of the dough
  8. Bake for 9 minutes
