

Ingredients:
- 1 cup coconut oil
- ½ cup brown sugar
- 1 teaspoon vanilla
- 3 cups rolled oats
- 1 cup non-dairy chocolate chips
- ½ cup peanut butter
Directions:
- Melt coconut oil and brown sugar in a large sauce pan over medium heat until coconut oil has melted and brown sugar has dissolved
- Stir in vanilla
- Mix in oats
- Cook over low heat for 3-4 minutes
- Pour half the oat mixture into a greased 9”x13” baking pan and spread the mixture to cover the entire bottom of the pan
- Melt peanut butter and chocolate chips together in the microwave and stir until smooth
- Pour the chocolate mixture over the oat layer in the pan (leave about ¼ of the mixture for drizzling)
- Pour the rest of the oat mixture over the chocolate layer
- Drizzle with the remaining chocolate mixture
- Refrigerate 2-3 hours, enjoy!
