Butterscotch Bars

Ingredients:

  • ½ cup coconut oil, melted
  • 1 ½ cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 ½ cup flour
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Directions:

  1. Preheat oven to 350º and grease 9’x13’ pan
  2. Combine coconut oil, brown sugar in electric mixing bowl
  3. Add eggs, vanilla, salt, and baking powder and mix
  4. Add flour and mix
  5. Add butterscotch and chocolate chips and mix
  6. Pour batter into prepared pan
  7. Bake for 15 minutes.  Check after 15 minutes to make sure edges are golden brown and a toothpick inserted into the middle comes out clean.  If not, bake for 2 minute increments, checking after each 2 minute period until they are done.
